The term "ready to eat foods" means foods that can be consumed either directly or after heating. They are foods with high content in often defined convenience food. Within this category we include different types of industries, such as the producers of: rice/pasta sold in the refrigerated cabinet and to be heated before consuming them; sandwiches; ready salads; canned or dehydrated foods in bags; dishes in refrigerated containers or kept at room temperature. We also include here the preserved food such as fish in oil or natural and meat in jelly. From a technological point of view the preparation procedures that guarantee the quality and the quality of the product are very important. The Codex Alimentarius, in fact, defines them as "any food that can be eaten without further listericid methods" thus technologies, materials and methods of packaging, which can guarantee high organoleptic quality, an inviting appearance and safety food, are fundamental.
